Watermelon-Tomato Granita

4 cups watermelon, rind removed and chopped
1 container cocktail tomatoes
1/2 cup water
1/3 cup agave
1 Tbsp. lime juice
1/4 tsp. Kosher salt
1 tsp. lime zest, for garnish


Step 1:

In a blender, process watermelon, tomatoes, water, agave, lime juice, and salt until smooth, about 1 minute.

Step 2:

Pour into a shallow freezer-safe container and freeze for one hour.

Step 3:

Using a fork, rake the mixture well and freeze again. Repeat this process two more times or until granita is frozen to a desired consistency.

Step 4:

Serve in a glass garnished with lime zest.
