BLT Breakfast Croissants with Garlic Herb Aioli

1/2 cup mayonnaise
4 cloves garlic, grated
2 Tbsp. parsley, finely chopped
2 Tbsp. tarragon, finely chopped
2 Tbsp. chives, finely chopped
1 tsp. distilled white vinegar
Kosher salt, to taste


4 croissants, halved
4-8 lettuce leaves
2 beefsteak tomatoes, sliced
1 avocado, thinly sliced
8 slices bacon, cooked
4 fried eggs, cooked to preference


Step 1:

Prepare the aioli: In a small bowl, combine mayonnaise, garlic, parsley, tarragon, chives, and vinegar. Stir well to combine. Season with salt to taste.

Step 2:

Assemble: Spread 2 Tbsp. of aioli on the bottom half of the croissant. Layer with lettuce, tomato slices, avocado slices, bacon slices, and fried egg. Serve with additional aioli.
