Tomato Egg Drop Miso Soup

Tomato Egg Drop Miso Soup


  • 2 Backyard Farms Tomatoes on the Vine
  • ¼ sweet onion
  • 1 tablespoon Miso Paste
  • 1 ½ cups water
  • 2 strips bacon
  • 1 large egg
  • 2 scallions


Chop onions, bacon, tomatoes and scalioons. 

In a large saucepan, cook bacon over medium heat for 2-3 minutes. Add onion to pan and cook until tender. Add tomatoes to pan and sauté for about 1 minute.

Add water and bring mixture to a boil. Reduce heat to medium-low. Add scallions and cook for 2-3 minutes. Reduce heat to low and add miso paste. Whisk to dissolve miso paste. 

While stirring the soup, use chopsticks or fork to drizzle egg into the saucepan slowly. When eggs are fluffy, turn off the heat.

Pour soup into individual soup bowls to serve.
