  • 6 Backyard Farms Beefsteak Tomatoes
  • 1 cucumber
  • 1 small red onion
  • 1 clove garlic                                                     
  • 2 red bell peppers
  • ¼ cup sherry vinegar
  • ¼ cup Extra Virgin Olive Oil
  • 1 jalapeño
  • Salt
  • Pepper


Place tomatoes in a container and puree using an immersion blender.  Run through a conical strainer to remove seeds and skin.

Peel and small dice the cucumber and small red onion; chop the garlic clove; de-seed and small dice the red bell pepper and jalapeño.

Combine all ingredients and season with salt and pepper to taste.

Place in the refrigerator to chill.
