Savory Stuffed Tomatoes

4 Backyard Farms Tomatoes on the Vine, cut in half
4 tablespoons butter
1 small onion finely chopped
2 cloves garlic, minced
Dash hot sauce or dried red pepper flakes to taste
2/3 cup minced ham
One 10 ounce package frozen spinach, defrosted and well squeezed
½ cup cooked brown or white rice
1 large egg, slightly beaten with a fork
Salt and pepper to taste
1 cup shredded Pepper Jack, cheddar or Swiss cheese

Preheat oven to 350F
Sprinkle the tomato halves lightly with salt and set aside.
In a saute’ pan, melt the butter; ad the onion and cook until it begins to wilt; stir in the garlic and continue cooking for a couple of minutes until the garlic softens. Stir in the hot sauce or pepper flakes. Cook 1 minute. Add the ham and continue cooking for a couple of minutes. Stir in the spinach and continue cooking for a couple of minutes. Stir in the rice and transfer mixture to a bowl. Add salt and pepper to taste. Stir in the beaten egg and combine the mixture well.
Place the tomatoes haves cut side up in a buttered baking dish. Divide the mixture and spread it on top of the tomatoes.
Bake the tomato halves for 25 to 30 minutes or until heated through
Sprinkle the cheese evenly over the tomatoes and continue cooking until the cheese melts. Serve hot.
