Avocado, Tomato Chicken Sandwich

Ingredients

leftover chicken, massaged kale and microgreens from the Loaded Chicken and Veggie Tacos with Cilantro Tahini Avocado Sauce

3 slices of Backyard Farms tomatoes

1-2 tbsp of the leftover cilantro avocado tahini sauce from the Loaded Chicken and Veggie Tacos with Cilantro Tahini Avocado Sauce

sea salt + pepper to your preference

half of an avocado

2 slices of your favorite bread

Preparation

It's a fact that planning meals in advance leads to healthier eating habits and less food waste. This dish is part of a healthy, 3-meal plan from lifestyle blogger Blair Flynn who shares creative recipes like this and healthly living tips at balancewithb.com. Assemble:
Warm or toast your bread in the oven then spread a layer of the cilantro avocado tahini sauce on both sides of the bread.

On one slice of the bread, add micro greens, kale and 2 slices of tomatoes.

On the second slice of bread, add half of the avocado, shredded chicken, tomatoes, sea salt and pepper.

Put together and cut for a super hearty and filling sandwich all made from leftovers from the tacos!
