Fiesta Salsa

Ingredients
- 2 boxes Backyard Farms Cocktail Tomatoes, diced
- 1 bunch cilantro, chopped
- 1 medium Vidalia onion, chopped in small pieces
- 1 ear of corn, cooked and cooled
- Hot pepper sauce, to taste (a couple of drops)
- Salt and pepper, to taste
- Lime juice, to taste (about a tablespoon)
Preparation
Hand chop tomatoes and onions into very small pieces and put in bowl.
Wash cilantro thoroughly, then pat dry (if wet it will make your salsa watery). Pull leaves off stems. Chop leaves by hand or in food processor. Add to mixture.
Cut corn from cob and add to mixture.
Add pepper sauce, salt, pepper and lime juice, to taste. Avoid using too much lime juice, or your salsa will be watery.
Serve with tortilla chips.
