Tomato and Mozzarella Salad with Basil

- 12 Backyard Farms Cocktail Tomatoes, quartered
- 1 tablespoon extra virgin olive oil
- 4 tablespoons balsamic vinegar
- 6 ounces fresh buffalo mozzarella cheese, cut into small cubes
- 8 large fresh basil leaves
- Salt and pepper, to taste
Fold basil leaves in half and, using scissors, slice leaves 1/8-inch wide.
Mix all ingredients in a bowl, then serve.
