1/3 cup extra virgin olive oil
1 large clove garlic, minced
1/4 cup chopped scallions or mild onion
1/2 cup sweet pickles diced, plus ½ cup pickle juice
Salt to taste

In a shallow salad bowl, combine all the dressing ingredients and set aside.
1/2 pound green beans, ends trimmed and beans cut crosswise in half
1/2 pound yellow wax beans, ends trimmed and beans cut crosswise in half
1 cup diced mozzarella or feta cheese
8 to 10 black olives, pitted
2 Backyard Farms tomatoes on the vine, diced
3 hard boiled eggs, cut into round slices
Small bunch fresh mint, torn into pieces
Try this pretty to look at and even better to eat Mediterranean Nicoise inspired salad made with Backyard Farms tomatoes on the vine for a nice change of taste. It has all the components of a healthy and complete balanced meal with protein, fiber and veggies and it tastes great!
Cook the green and yellow beans until tender; drain them and add to the salad bowl. Add the cheese, olives and tomatoes and combine well. Salt and pepper to taste.
Arrange the egg slices over the salad and sprinkle the salad with the mint.
