BLT Macaroni Salad


1 16 ounce box elbow macaroni

1 1/2 cup real mayonnaise

3/4 cup sour cream

3 tablespoons sugar

2 tablespoons apple cider vinegar

1 1/2 teaspoons onion powder

1 1/2 teaspoons garlic powder

1/2 teaspoon smoked paprika or chipotle powder

5 scallions thinly sliced

2 cups chopped romaine hearts

1 package of Backyard Farms cocktail tomatoes, diced

1 package precooked bacon, chopped

Kosher salt to taste

Black pepper to taste

Cook the elbow macaroni in salted water per the packaged instructions until al dente. Drain well. In a large mixing bowl, whisk together the mayonnaise, sour cream, apple cider vinegar, onion powder, garlic powder, smoked paprika, and black pepper to taste. Add the drained macaroni, sliced green onion and diced tomatoes. Mix until evenly distributed then cover and chill. Just before serviing, mix in the chopped Romaine lettuce and crumbled bacon. Taste and adjust the creaminess of the dressing and the amount of salt and black pepper, if needed. Garnish with additional bacon and green onion if desired. Serve chilled!
