Black Bean, Corn, and Tomato Salad

Ingredients
Salad:
- 1 (15-ounce) can black beans, rinsed and drained
- 1 (15-ounce) can gold & white corn, drained
- 1 cup Backyard Farms Cocktail Tomatoes, cut into pieces
- ½ cup chopped fresh cilantro leaves
- ⅓ cup chopped red onion
- 2 avocados, peeled, pit removed, cut into pieces
Dressing:
- 3 tablespoons extra virgin olive oil
- 1 tablespoon balsamic vinegar
- 1 tablespoon red wine vinegar
- ¼ teaspoon salt
- ⅛ teaspoon freshly cracked pepper
Preparation
In large mixing bowl, stir together all salad ingredients.
In 1-cup glass measure, combine all dressing ingredients. Pour over salad; mix well.
Refrigerate leftovers.
