Tomato and Pesto Grilled Cheese Bruschetta Sandwich

- 2 Backyard Farms Beefsteak Tomatoes
- 8 slices ¼-inch thick fresh French Bread
- ½ cup favorite fresh Pesto
- ¼ cup thinly sliced fresh basil
- 8 ounces fresh Mozzarella butter with olive oil, or butter
- Balsamic vinegar
- Salt and pepper
Take Backyard Farms Beefsteak Tomatoes and slice thick. Slice the fresh mozzarella.
Butter one side of each bread slice. Heat large skillet to medium or medium/high heat. Place 4 slices of bread on the skillet, buttered side down, and spread with some pesto. Place the other 4 slices on the skillet, buttered side down, and place mozzarella on them. The bread should be cooked open-faced and may need to be cooked in batches depending on size of skillet.
When the cheese is melted and the bottom of the bread is browned, place Backyard Farms Beefsteak Tomato slices on the pesto side, sprinkle with some salt and pepper, and drizzle with balsamic vinegar and fresh basil.
When removing from skillet, place melted cheese side on top of tomato side. Slice in half and enjoy!
