- Serves 4
- 2 tablespoons extra virgin olive oil
- 1 garlic clove, minced
- 1 medium onion, minced
- 1 red bell pepper, minced
- 1½ cups Basmati rice
- 1 teaspoon hot pepper paste or 1 teaspoon dried red pepper flakes
- 2½ to 3 cups pureed Backyard Farms Beefsteak Tomatoes
- Salt and pepper to taste
Heat olive oil in a saute pan. Stir in the garlic, onion and peppers and cook over medium heat until the mixture begins to soften. Stir in the rice and coat well with the ingredients.
Carefully pour the tomato puree over the rice mixture, lower the heat to medium-low, cover the pan and cook for about 15 minutes. Add a little water if the mixture seems too dry. Season with salt and pepper.
