Grilled Chicken Thighs with Sassy Salsa

FOR THE SALSA
4 Backyard Farms tomatoes on the vine, diced
Juice and zest of two large limes
1 teaspoon salt
3 tablespoons olive oil
2 tablespoons honey
1 clove garlic minced
2 tablespoons fresh or dried thyme
1 tablespoon minced fresh parsley or cilantro
1/4 cup raisins
1/4 teaspoon (or more to taste) sriracha sauce or hot red pepper sauce
After dicing the tomatoes, place them in a colander and set aside.
In a large bowl combine all the remaining ingredients and mix well. Add the drained tomatoes, coat them well and set aside. Or refrigerate overnight if making ahead.
FOR THE CHICKEN THIGH MARINADE
Juice and zest of two limes
2 cloves garlic, minced
1/4 cup diced scallions
4 tablespoons spicy mustard
Salt to taste
Grinding black pepper
8 boneless chicken thighs, about 1-1/2 pounds
Place all the marinade ingredients in a rectangular dish and mix well. Add the thighs to the marinade and coat them well. Refrigerate them for at least 3 hours or overnight.
This tasty dish cooks in minutes but requires a bit of planning ahead. I like to make the salsa a day or two ahead of time to really mingle the flavors. When ready to cook, get the grill hot (400F); cook the chicken for 3 minutes on both sides and continute turning until an internal temperature of 165F is reached -- no more than 10 minutes.
Serve the chicken accompanied with the tomato salsa on the side.
