Chicken Meatball Parmesan Sliders with Cocktail Tomato Relish

Ingredients
- 1 pound ground chicken
- 2 eggs, beaten
- 1 3/4 cup panko bread crumbs
- ½ cup onion, diced
- 1 tablespoon dried parsley
- 1 tablespoon dried basil
- 2 cloves garlic, minced
- 3/4 cup grated Parmesan Reggiano
- Salt and pepper to taste
- 12 cubed pieces of Manchego cheese
- 1½ cups Backyard Farms Cocktail Tomatoes, diced
- 1 tablespoon olive oil
- 1 teaspoon parsley
- 12 slider buns
- 4 ounces Provolone cheese
Preparation
Preheat oven to 375ºF.
In a small bowl, combine the ground chicken, egg, bread crumbs, onion, parsley, basil, garlic, Parmesan Reggiano, and the salt and pepper. Divide the meat into 12 portions. Take a piece of Manchego cheese and shape the meat so the cheese is inside. Roll into a tight ball.
Place meat on a greased baking sheet and bake 20-25 minutes or until well done and golden brown. Take the meatballs out and place each on a slider bun. Mix the diced tomatoes with the olive oil and parsley. Top each slicer with the diced tomatoes and a little of the provolone cheese. Put back into the oven on broil for 5 minutes. Remove from oven, top with the other bun, and enjoy!
