Fresh Cocktail Tomato Sauce

2 cups Backyard Farms Cocktail Tomatoes, stemmed, washed, dried and cut into quarters
1 ½ -teaspoons sugar
1 teaspoon salt
¼ cup minced parsley
1 large clove garlic, minced
6 tablespoons extra virgin olive oil
1 tablespoon white wine vinegar
6 fresh basil leaves torn into small pieces
Use this no-cook marinated tomato sauce at room temperature hot pasta. The recipe is enough to dress one pound of pasta such as butterflies, rigatoni or twists.
In a medium size bowl combine the tomatoes with the sugar, salt, parsley, garlic olive and vinegar. Toss well. Cover and marinate several hours at room temperature.
When ready to use, cook your favorite pasta, drain and toss immediately with the sauce. Add the basil and serve.
