Backyard Farms Tomatoes on the Vine and Green Bean Summer Salad

- ¼ cup either homemade or prepared pesto sauce
- Juice of one large lime plus zest
- 1 pound green beans, trimmed and cut on the diagonal into thirds
- 2 Backyard Farms Tomatoes on the Vine, diced
- 1 teaspoon sugar
- ¼ cup sliced almonds
- ½ teaspoon salt
- Grinding black pepper
Keep summertime eating cool and refreshing with Backyard Farms tomatoes on the vine and green bean salad. It is even better made a day or two ahead of time!
Combine the pesto sauce, lime juice and zest in a glass casserole dish and set aside.
Fill a large bowl with ice water and set aside.
Cook the beans uncovered in salted boiling water until fork tender; drain and add to the bowl with the ice water to cool them and help retain their color. When cool, drain well, dry them on paper towels and add them to the pesto sauce mixture and toss gently. Add the tomatoes and the sugar and toss again. Season with salt and pepper.
Allow salad to marinate covered for several hours or refrigerate overnight and bring to room temperature to serve.
Scatter the nuts over the top just before serving.
