Spicy Fried Paneer and Tomato Mini Sandwiches

Ingredients

  • ½ pound fresh paneer cheese (available at Whole Foods and most Indian groceries), cut into 2x2 inch squares, about ½ inch thick
  • 1-2 large Backyard Farms Beefsteak Tomatoes, sliced ½ inch thick then cut in half (or for better presentation, into 2x2 squares to match the paneer)
  • 2 tablespoons butter
  • 1 teaspoon cumin seeds
  • ½ - 1 teaspoon mild curry spice (to taste)
  • ½ teaspoon fine salt
  • Toothpicks for assembling

Preparation

Prep the ingredients. On medium heat, melt the butter in a heavy bottom skillet (or sauté pan). Add the cumin seeds, curry and salt. Mix with the butter. Turn the heat up so it is hot enough to “fry." Add the paneer squares and fry on each side until golden brown and crisp. Do the same for the other side. Remove the paneer from the pan and, while still hot, immediately place a sliced tomato over one paneer square and top with another paneer square. Secure with a toothpick and serve.
