Family Friendly Recipes from ChopChop
Throughout October, we’ve been partnering with ChopChop Magazine’s Cooking Club, to encourage families to cook real food together. Each month they feature a new recipe challenge, where kids can win prizes and badges while having fun in the kitchen and learning how to make healthy food. The current challenge is to create a Pasta and Tomato Sauce dish – one of our favorites!

ChopChop’s Tomato Soup with Cheddar Cheese is sort of like a cross between tomato soup and a grilled cheese sandwich – perfect for a crisp fall day! We suggest using fresh Tomatoes on the Vine instead of canned, see the full recipe here.
This Roasted Eggplant Tomato Ratatouille recipe is a great way to help your kids learn to love a “scary” looking vegetable they might otherwise refuse to eat. Chop your veggies and mix with thyme, oil, and salt, then bake on a cookie sheet for 45 minutes. We like ours served on top of pasta and topped with plenty of Parmesan cheese!
These Greek Salad Kabobs are a healthy and fun after school snack. The trick is to marinate your feta cheese in lemon juice and zest, olive oil, mint, and garlic while chopping the cucumbers and quartering some Cocktail Tomatoes.
