Three of our Favorite Spring-Inspired Recipes

Unless you had the pleasure of spending the past winter in the tropics, you were probably braving the cold and shoveling every other day just like the rest of us. Well (knock on wood), the temperature is warming up and we finally get to say that spring is here!

While we won’t pack away our coats just yet, it’s time to celebrate spring with a few of our favorite warmer weather recipes.

 

1. Cauliflower “Rice” and Cocktail Tomato 

This colorful dish is a fresh, light twist on dinner. Using a full head of cauliflower, Cocktail Tomatoes, garlic, onion, parsley and a few other ingredients, you can create a bowl of this delicious “rice” in about 10 minutes.

2. Chicken Sandwiches with Fresh Mozzarella and Tomato Slices

With nicer weather comes the opportunity for more outdoor activities and day trips, and this sandwich is perfect to pack with you while on the go.

All you need to whip up this quick and satisfying meal is chicken, Beefsteak Tomatoes, a bit of mozzarella, and basil, then sandwich the ingredients between two slices of ciabatta and lunch is served.

3. Pasta Salad with Tomatoes, Spinach and Asparagus

Spring is the beginning of cookout season. Memorial Day is only a couple of months away and the BBQ is warmed up well before the official start of summer.

While the burgers, chicken and sausages usually get all the attention, this pasta salad recipe made with spinach, asparagus and our Tomatoes on the Vine could easily steal the show.
