Happy New Year! Our Healthy Tomato Recipe Roundup
We wish everyone a healthy and happy New Year! If your New Year’s resolution for 2015 is to eat healthier and exercise more, we have a few tomato recipe recommendations to get you started (getting to the gym is up to you!).
Simple, healthy and most importantly, delicious! Use fresh Cocktail Tomatoes, avocado, cucumbers and a little red onion to make this salad, and then top with an EVOO and lime juice dressing.
If you’re looking to enjoy this for lunch at work, make the dressing in the morning, then pack all the ingredients to chop later. This will keep your fruits and vegetables as fresh and crisp as possible (just remember to keep the tomatoes outside of the refrigerator!).
If you’re a seafood and tomato lover, here’s a tasty dinner treat: Baked Halibut in Parchment accompanied by Beefsteak Tomatoes.
Top your halibut with pesto sauce (there’s a quick herb pesto recipe here if you’d like to make your own) and thick slices of Beefsteak. Drizzle with salt, pepper and olive oil, and let it bake in parchment paper until the fish is fully cooked. The antioxidants in the tomatoes, combined with the omega-3 fatty acids of the halibut will provide you with a healthy and hearty dish!
Here’s a great example of a healthy recipe that doesn’t skimp on taste. Stacked high with delicious flavors, we typically serve our Tomato, Eggplant and Mozzarella Napoleons over a big plate of fresh greens to turn it into an entrée dish.
This recipe is great when made with Beefsteaks or slices of Tomatoes on the Vine, but tastes best when enjoyed with our Somerset Pinks. While mozzarella cheese is high in saturated fat, we recommend going the extra healthy mile by using a reduced-fat mozzarella cheese as a substitute.
