Grilled Tomato, Zucchini and Sausage Skewers with Honey Mustard Dipping Sauce

For the Skewers
2 medium zucchini, ends trimmed
2 packages Backyard Farms Cocktail Tomatoes
Extra-virgin olive oil
For the Honey Mustard Dipping Sauce
1/4 cup Dijon mustard
2 tablespoons honey
1 tablespoon finely chopped fresh chives
1/8 teaspoon salt
These easy and flavorful skewers will be a hit at your next Summer party! Serve them as is, over a bed of grains, or try them on top of your favorite mixed salad. If you’re using wooden skewers, soak them in water for 10 minutes.
Pre-heat your grill to medium-high.
Combine all the ingredients for the dipping sauce in a small bowl. Set aside.
Slice each of the sausages into 4 pieces. Slice the zucchini into rounds, then slice those rounds in half to create half-moon shapes. Thread the sausage pieces, zucchini and tomatoes onto skewers, alternating the ingredients. Brush lightly with extra-virgin olive oil and sprinkle with a little salt and black pepper.
Add the skewers to your grill, and cook for about 2-3 minutes per side. Remove and place on a clean plate. Serve immediately with the dipping sauce on the side.
